Chocolate Brioche

A classic and enjoyable breakfast bread; light, sweet, and compliments a hot beverage.

Ingredients

  • 500g of flour
  • 215ml of lukewarm milk
  • 13g of yeast
  • 3 eggs
  • 75g of sugar
  • 1 packet of vanilla sugar
  • 1/2 teaspoon of salt
  • 100g of melted butter
  • 100g chocolate chips

Prep: 1h 40 min.
Cook: 20 min.

Directions

  1. Sift 500g of flour into a bowl.
  2. Pour the 75g of sugar and mix.
  3. In a glass, pour 15ml of milk, and mix with the 13g of yeast. Stir and mix well. Then pour into the bowl.
  4. Break 3 eggs and pour them into the bowl and mix.
  5. Pour the packet of vanilla sugar into the mix. You can also use a tablespoon of vanilla extract.
  6. Pour 200ml of lukewarm milk into the bowl and mix for 3 mins. Add the salt while mixing.
  7. Add the 100g of melted butter and mix. You can use a KitchenAid mixer to do the mixing as well for 5-10 mins.
  8. Let the dough rise for approx. 1h 15 mins.
  9. Mix the dough again, and add in the chocolate chips.
  10. Break the dough into three even sized balls. Stretch into long segments and interweave them to make a braid. Leave the dough to rest for 20 mins.
  11. Mix 2 egg yolks and brush the mix over the dough.
  12. Preheat oven to 180 C (360 F), and bake for 20 mins. Enjoy!
